Butter flavored cooking spray
2 cups old fashioned rolled oats
1 ½ cup white all purpose flour
1 teaspoon baking soda
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon salt
2/3 cup seedless raisins
¼ cup liquid egg substitute (or 1 large egg)
3 Tablespoons canola oil
¾ cup unsweetened applesauce
1 ½ teaspoons vanilla extract
1/3 cup brown sugar
1/3 cup sugar
Preheat oven to 350 degrees F. Lightly spray a cookie sheet with cooking spray. In a large bowl, combine flour, baking soda, oats, cinnamon, salt and nutmeg. Toss with raisins. In a medium bowl, cream together egg, applesauce, canola oil, vanilla and the sugars. Whisk to blend thoroughly. Fold egg-sugar mixture into flour-oat mixture, 1/3 at a time, mixing well. Drop by the tablespoonful onto prepared cookie sheet, about 2 inches apart. Bake for 12-15 minutes until golden brown. Using a metal spatula, transfer cookies to a cooling rack. When cool, store in an airtight container.
Yield: 36 cookies. Serving Size: 1 cookie.
