2 cups chopped apple (2 medium apples)
1 ½ teaspoons lemon juice
¼ cup raisins or snipped pitted whole dates
¼ cup seedless green grapes, halved
2 Tablespoons sliced celery
¼ cup nonfat mayonnaise
¼ cup plain nonfat yogurt
Lettuce leaves (try Romaine or loose leaf)
1 Tablespoon chopped walnuts
In a medium mixing bowl, toss together the chopped apple and lemon juice. Stir in the raisins or snipped dates, grapes and celery. For the Dressing: In a small mixing bowl stir together the mayonnaise and yogurt. Fold the dressing into the apple mixture. Cover and chill for 2 to 24 hours. To serve, arrange lettuce leaves on salad plates. Spoon the salad mixture onto the lettuce-lined plates. Sprinkle with the chopped walnuts or pecans.
