Non-stick cooking spray 
2 lbs. new potatoes (quartered) 
3 medium carrots (peeled and cut) 
2 T. snipped fresh chives 
1 T. fresh oregano 
1 T. fresh parsley 
2 teaspoons fresh rosemary 
1t. fresh sage 
3 cloves garlic (minced) 
2 T. melted butter 
2 T. olive oil 
½ t. salt 
¼ t ground pepper 
Spray a 13 x 9 inch baking pan with nonstick spray and set aside. Place quartered potatoes and carrots in pan. In a small bowl, toss together chives, oregano, parsley, rosemary, sage, garlic, butter & oil. Drizzle herb mixture over the vegetables and toss gently to coat. Sprinkle with salt and pepper. Bake, covered at 400 degrees F for 30 minutes. Stir and bake uncovered for additional 15-20 minutes or until potatoes are tender.
